(Becky Bakes) Strawberry Fields Forever

Hello and welcome back to Peaches & Teas! I know, its possible I may have neglected this little space on the internet for a bit too long, but I'm back! In fact, you could even say I'm diving back into the kitchen to bake!

This week I knew I wanted to make something decadent. I've always loved strawberries (in fact, when I was little I loved them so much I had a denim backpack with rhinestone-d strawberries on, but that's for another day) So i decided to whip up this little beauty right here! Its a basic twist on an old favourite: victoria sponge cake. However, this one features white chocolate chips and freeze dried strawberries. Its shockingly simple and can be whipped up in an hour! The real winner here is the fresh strawberry buttercream, which I just can't get enough of!

My personal favourite victoria sponge recipe was written by the bake-off queen herself, Mary Berry. I use it so often that I don't even have to look at it anymore, Its 175g of butter, sugar and flour for two sponges!

I whipped up the fresh strawberry buttercream from this recipe featured on Cooking Classy ! It was super simple to make and the only adjustments I used was changing the butter in the buttercream to a non-dairy alternative, which did change the solidity of the mixture, but this was remedied by refrigerating for half an hour.

Dressing it with icing sugar and strawberries was a nice touch, and it tasted as good as it looked (I promise!) - so give it a go, and tell me which you think in the comments!

January/ February Recap

Hello and welcome back to Peaches and Teas!

I know I've been saying this a lot, but I've been overloaded with work for my degree and so I haven't posted that often - that hopefully will all change soon! January and February have been such hectic months, at the end of January I turned 20, and officially left my teenage years behind me. Though I still eat Nutella from the jar, so I'm not sure I've changed that much! Other than that I've been in a play which has been such a lovely experience. I've only got a few short weeks left of term now and I'm looking forward to having a nice long break.

What are you guys loving at the moment?

Favourite Beauty, Fashion, Food & Lifestyle Blogs!

1.The Sunday Girl - It is safe to say that this blog is a staple for anybody obsessed with fashion and beauty. Not only can you count on an upload everyday (not just Sunday!), but the reviews are honest and have introduced me to so many products I now love! I have my Flamingo candle obsession to thank The Sunday Girl for.

2.Olsens Anonymous - I adore Mary-Kate and Ashley Olsen. I think their style is something I strive for constantly and they both just radiate Parisienne chic. This blog looks at MK & A's outfits and styles both retrospectively and in the present. If you're a lover of the Olsen's style, this blog is for you.

3.Sally's Baking Addiction - This blog gives me serious tummy rumbles. Everything looks so amazing to eat and so simple to make! At the moment I'm trying to branch out and cook different things (easier said than done on a student budget) and I get so inspired whenever I take a glance at this blog!

4.Essiebutton - I honestly feel like Essiebutton is my long lost sister. We both have a shared love of Tim Hortons and tea - that is enough to bond ladies for life! Her beauty reviews are also on point and she has some great advice for people who struggle with oily/dry/combination/all over the place skin.

5.Ghostparties is a great all-rounder blog for beauty and lifestyle, with beautiful photography. I was scrolling through my 'liked posts' on bloglovin and found a huge number of Ghostparties posts- so it is certain she is one of my favourites!

I hope you enjoyed having a little peek into some of my favourite blogs at the moment and don't forget to follow me on bloglovin !

New Year, New Goals.

Hello and welcome back to Peaches & Teas!

It is really easy to fall out of the blogging habit and I certainly did after Christmas. After a hectic period of Blogmas I found myself stuck for ideas and having a serious case of blogging block! However, I am now back, refreshed and refueled and ready to share with you some of my new years goals (that I may have started a little late, but better late than never!).

First of all, I really want to look after my body and mind in 2015. That sounds very vague, but I'm looking forward to being more active (I'm currently searching for a good pilates class near by, but am substituting with the also lovely Blogilates!) and I am really set on practising meditation and mindfulness in my everyday life. Over the winter period I managed to gain a lot of weight and I'm now out of my 'comfort zone' so I've found eating fresh and healthy foods has helped not only shift a couple of pounds, but give me an extra boost in the morning!

Secondly, I really want to help make my blog bigger and better. Over the Christmas period I reached over 200 followers on bloglovin which was such a huge deal for me and I'd love to connect with as many readers and bloggers as possible. I'm also planning a lot of new posts with a variety of subjects, with more baking (with a new healthier twist) and make up reviews coming as soon as possible. If you're not yet following me on bloglovin, please do, as it is the best way to keep up with all your favourite blogs on one website!

Finally, I've worked really hard at university before Christmas, and I'd like to continue that for the rest of the year. For once in my life I'm doing work well before the deadlines and (dare I say it) proof reading it thoroughly! I always put so much pressure on myself to do well at University, but at the moment my obsession with organization is helping me achieve those goals. Next week I turn 20, and I'm glad to say I'll be entering my third decade of life with an organized mindset.

How are your resolutions going? There are still 11 months of the year to work on them if you're struggling now!
