Becky Bakes: A 'Winter Warmer' Spiced Stewed Apple Cake.

In a sea of chocolate yule logs and christmas cake, I wanted something light and warming. So i ventured into the kitchen, to whip up a spiced stewed apple cake. I was rather weary of making one, considering all of the extra liquid added to the mixture, but it turned out perfectly and it is such a simple bake!

To make this cake you will need:

  • the mixture of two large stewed cooking apples. I like this recipe.
  • 175 of butter or dairy-free alternative
  • 175g of self raising flour
  • 175g of caster sugar
  • 3 eggs
  • 1 1/2 tsp of baking powder
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger



 Firstly,  make the stewed apples, following the recipe linked above, however add two tsp. of ground cinnamon to the mixture (or a cinnamon stick, as pictured below, however remember to remove the sticks once the mixture has stewed.)

Pre-heat the oven to 170 degrees c. (Fan, higher for conventional ovens.)

Now make the basic victoria sponge cake recipe. Cream the butter and sugar together, then add the eggs , finally adding the flour, baking powder and spices to the mixture.

Combine the sponge mixture  and the stewed apples mixing thoroughly but ensuring you do not lose air that has been mixed in,

Put the mixture into greased and lined tins and bake for 35 minutes, adding a tin foil 'hat' to the cake 20 minutes in.

This cake is honestly the most warming, spicy and sweet cake I've ever tried! If you give it a go, be sure to tweet me pictures @peachesandteas !
